Shrimp paste is popular in Vietnam. It is made by traditional technique in some districts along coastal line of the country. In this article we introduce one brand of shrimp paste named Hau Loc which has a history of over 800 years. It is one of best well-known local specialties. The product get National certificate of geographical indication.

Although the name is shrimp paste but it is made from Moi, a sea creature in North central Vietnam. The farmers in cooperative can make shrimp paste 2 times a year, for it depends on input for production as well as sunlight. 




The farmers take the sea Moi, then clean, remove skin, and grind the meat. Soak with salt, that keep in dry place for 2 years, with the salty rate 25 - 27%. Dry under sunlight for 6 - 7 months. The paste is stired up once every 2 day. Keep the paste off rain water and fresh water. The process of making this shrimp paste is well managed for quality and hygiene.
